This recognition carries special significance in Colorado. Sauvage Spectrum is only the second Colorado winery ever to receive the Hot Brand distinction, following Infinite Monkey Theorem, which earned the honor in 2016.

The connection between the two wineries runs far deeper than coincidence.
Sauvage Spectrum’s Winemaker / Co-Founder, Patric Matysiewski, was first introduced to the wine industry at Infinite Monkey Theorem, where he rose through the ranks from harvest intern to Cellar Master and Production Manager. Just a few years earlier in Palisade, Colorado, Kaibab Sauvage, founder of Colorado Vineyard Specialists, sold his inaugural vineyard harvest to Infinite Monkey Theorem—also the winery’s inaugural harvest—ironically marking the beginning of both men working with the same fruit years before forming a partnership of their own.
Matysiewski was introduced to Colorado’s Western Slope and its vineyards while working at Infinite Monkey Theorem, unknowingly laying the foundation for his future. Years later, his path reconnected with Kaibab Sauvage, uniting vineyard and cellar expertise to create Sauvage Spectrum Estate Winery & Vineyard—a producer grounded in Colorado terroir, estate farming, and expressive, boundary-pushing wines and techniques.
“This recognition feels like a full-circle moment—the years of toiling among stainless steel tanks and trudging across concrete floors were worth every second,” said Matysiewski. “It honors not just what we’re building today, but the people, vineyards, and experiences that shaped us along the way.”
